Coconut Curried Lentils.

This is, apart from one of my favourite autumny dishes, one of those one pot-wonders. Brilliant for me because I really don't agree with doing the washing up. Well, here is Coconut Curried Lentils. Easy peasy (or perhaps easy lentily?), filling, and friendly on the student budget.


  • 1 onion
  • garlic + ginger
  • cummin, coriander, cayenne pepper
  • 5 dl red lentils
  • 1 can coconut milk
  • 1 pack crushed tomato
  • lime juice

Chop the onion and fry on low to medium heat until softened, then add the chopped garlic and ginger and let fry for another minute or so. Add the spices and lentils, stirring everything around. Empty the content of the coconut milk can and the pack of crushed tomato into the pan and bring to the boil. Once boiling, let it simmer on a low-to-medium temperature until thickened. About 15-20 minutes. Et voila! Serve with fresh lime juice and salt+pepper to taste.
