The Mind-Changing Tomato Sauce.

Throughout my life, I have not been the biggest fan of tomato sauce-based dishes, like sure I will eat it, but it is never something that I crave for.

This sauce however has proven me wrong. I guess I have simply been eating the wrong darn kind of tomato sauce (by which I mean some bland ready made version.)


This one, full of flavourful roasted veg, is perfect for lasagna, pasta dishes and pizza (aka all the fun stuff!) and I tend to make a big batch and store portion-packed in the freezer. Pretty neat for those days when you are too lazy to cook.

It also provides a perfect opportunity of a fridge cleanse, as you can chuck about any vegetables into the oven.



  • 6-10 whole plum tomatoes (or canned tomatoes)
  • 1 red capsicum
  • 1 yellow onion
  • 3 carrots
  • 1 zucchini/eggplant
  • 4-5 garlic cloves (I use the entire bulb!)
  • 1 dl fresh basil
  • salt + pepper to taste
  • olive oil

1. Turn the oven on 200°. 2. Chop everything into rough pieces. 3. Place your veg in an ovenproof dish and sprinkle with olive oil + salt. 4. Bake for about 50-60 minutes, until the vegetables are tender (when they begin to look like they'd need a whole lotta anti-wrinkle Q10+ you know) Make sure to stir about every 15 minutes or so. 5. Place everything in a food processor. Add fresh basil, salt and pepper to taste.


 I "dressed" the garlic bulb in aluminium foil to prevent it from burning, but that is optional. It cooks faster without the foil.


 I served it with Ikea's (semi)new vegetable balls (and also got lost at their parking lot...) It was worth it though, as the veggie balls were really tasty. A great product to stock up in the freezer; you get a kilo for 39SEK and they are made from ingredients including chickpeas, sweetcorn and green peas. Kind of falafel-y and that is never a bad thing!
